Easy Summer Spaghetti!

Last night I made a delicious spaghetti dinner for myself and a friend!  This is a recipe I made up on the spot, as far as I’m concerned that’s the best way to create something exciting and new!

I cooked enough pasta for about four servings (it’s always good to have leftover pasta for easy meals later) and topped it with pan-simmered ground turkey, roma tomatoes, sweet onion, garlic, basil, salt and pepper.  Incredibly easy, fresh and tasty.

All I did was heat the pan with some extra virgin olive oil on medium heat, then I added the ground turkey, once it had started to brown, I added the diced tomatoes, onions, garlic, basil and seasonings.  I turned down the heat and let the ingredients simmer for about 15 minutes!  Voila, all set to go on top of the spaghetti noodles!

As a side dish, I made an easy green salad:  sliced cucumbers, avocado, oil and balsamic vinegar dressing and a sprinkling of ground pepper.

This dinner was super simple and perfect for a summer evening!
