Doma Bella!

Dustin J. Trani knows what’s up.  The Executive Chef of Doma, in Beverly Hills, is throwing down incredible dishes…probably some of the best things you haven’t tasted…yet.  The menu is classic with an innovative twist.  As food lovers and frequent diners, we love to be surprised right?  When a chef can make us “oooh” and “aaaah” it’s the best. When they can make us say, “I wouldn’t have put those flavors together, but wow!” we eat up that experience just as quickly as the meal itself.  Trani’s menu surprised the bejesus out of me.  Finally.


I ate a lot you guys, but here are my perv-able favorites!

Thai Style Big Eye Tuna Ceviche (coconut crème, thai lime vinaigrette, dungeness crab, radichio, wonton).  The presentation of this starter, was my first “aaaah” moment.  Our server delivered it on the table in a tubular glass vase.  The crème lined the bottom as seafood bites were layered upon each other.  The wonton sticks protruded like tree branches.  The entire display could be likened to a mini edible atrium.  My fork hit the bottom and came up with a coconut crème soaked bite of tuna.  Incredible.  I love traditional ceviche, but this new addition of coconut flavor took my tastebuds on an unexpected journey!


Grilled Spanish Octopus.  Confession:  Octopus is not an item that my appetite naturally gravitates to on menus.  I have nothing against it, but I usually opt for land-roaming meats instead.  I will now think twice…or just order it over and over again at Doma.  The risk with Octopus is not cooking it properly and having it take on a rubbery texture.  This ‘pus was different, it actually tasted like meat.  It was the perfect texture, at first firm, but then melty.  No sauce was needed.  Nothing beats the taste of clean.

Cocoa Pasta Tortellini (Wild Shrimp, Ginger & Scallop Mousse, Sweet Chili Butter, Chice Peanut and Sesame Powders).  This is one of the most unique items I have ever seen on a fine dining menu.  The blackish-brown pasta satchels were filled with smooth mousse deliciousness.  How do I really explain how good these were?  It was like biting into a savory pasta-candy.  The cocoa was not over-powering, it was sublte, only the slightest flavor seeped through.  You wouldn’t want any more than that.  The mousse inside was sweet and spicy.  Everything worked.

Yes, I saved room for dessert!

Vegan Peanut Butter Ice Cream and Chocolate Gelato.  The scoops were served side by side like two beautiful dessert breasts…sorry, but that’s the best way to describe them!  The peanut butter was my favorite.  I didn’t even know it was vegan until Trani told me!  I would never have assumed!  It was creamy and rich like real ice cream!  You get that I was satisfied, right?!

Doma’s food was exceptional in taste, creativity, and presentation.  Sitting in the large dining room with traditional white table cloths and easy serenades by Sinatra and such, only made my evening more relaxing.  I thank Trani, his kitchen team, and the gracious and attentive staff.  Visit soon…because I said so.
